Simple Dinner Recipes: Chicken Cordon Bleu

This is a serving for 4 so you can adjust the recipe accordingly.
INGREDIENTS:
- 4 skinless and boneless chicken breasts
- 4 slices ham (recommend honey ham)
- 4 slices Swiss cheese
- 2 tbsp all-purpose flour
- 3/4 tsp paprika
- 1/4 cup butter
- 1/3 cup dry white wine (sometimes I leave this out)
- 3/4 tsp chicken bouillon granules
- 2 tsp cornstarch
- 2/3 cup heavy whipping cream
DIRECTIONS:
- Pound chicken breasts if they are too thick. Place a slice of ham and cheese on each chicken breasts. Fold the edges of the chicken over the filling. You can secure it with toothpicks if you wish but I find it unnecessary.
- Mix the flour and paprika in a bowl and coat the chicken pieces evenly.
- Heat the butter over high heat in a skillet. Cook the chicken until browned on all sides. Add the wine and bouillon granules. Reduce heat to low and cover the skillet. Let it simmer for 30 minutes, until chicken is cooked. You will know when it’s cooked when the meat is no longer pink and juices run clear.
- Transfer the breasts to a warm platter. If you used toothpicks, you will need to remove them. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring it until it thickens and pour over the chicken.
- Serve the chicken cordon blue warm with mashed potatoes and asparagus.
