Simple Dinner Recipes: Roasted Herb Chicken
This is a really good recipe for roasted herb chicken. I make this herbed chicken at least once a week for dinner because it is SO simple and easy! Furthermore, it is delicious and I think it is quite a full meal so give it a try one of these days

DIRECTIONS:
- Preheat oven to 350 degrees F (175 degrees C)
- Rub butter all over chicken.
- Add basil and pepper to taste.
- Stuff the chicken cavity with onions, carrots and garlic.
- Place potatoes at the side of the roasting dish, around the chicken.
- Pour the chicken stock into the roasting dish and all over the chicken.
- Roast in the preheated oven for about 2 hours or so, or until chicken is cooked and juices run clear.
- You can also baste the herbed chicken with chicken stock a couple of times during the cooking time.
- When chicken is cooked, discard items which were stuffed inside the cavity. Serve with salad or rice for a scrumptious meal.
